Vitamin C

Vitamin C (also known under the name of ascorbic acid) is a well publicized vitamin that is not really understood properly, despite the huge amounts of information available. Vitamin C is basically one of the most important nutrients we need in order to live. It is a water soluble vitamin with antioxidant properties. Collagen forming is done with vitamin C interference. For those that do not know, collagen is a protein that basically gives blood vessels, muscle, bones and cartilage structure. Vitamin C is also important in transporting iron while maintaining teeth, bones and capillaries.

When talking about good sources of vitamin C we are referring to vitamin C quantities that relate to calorie content while contributing with a minimum of 10% to RDA. It is recommended that you take in around 90 mg of this vitamin daily if you are men. Women should include at least 75 mg daily. Keep in mind that smokers will require around 35 mg of vitamin C more daily because smoking will increase oxidative stress. According to statistics, most men out there do take in at least the RDA of vitamin C while women usually take in a little less than required. Most of the nutrient is consumed from vegetables and fruits so it is very important to include them as a part of your day to day nutrition plan.

A good, well balanced diet is the secret in getting the right quantities of vitamin C. The problem is that high quantities of this nutrient end up lost through storage, cooking and preparation of meals. In order to make sure that this is minimized as much as possible you will have to pay attention to some facts. First of, all vegetables and fruits should be served raw whenever this is possible. Boiling and steaming foods should be done in small quantities of water and microwaving has to be performed with the shortest stay possible inside the microwave oven. Try to cook potatoes without cutting out the skins and prepared juices should be refrigerated and stored only for a maximum of three days. This basically means that you should pay attention that you only make enough natural fruit juice for around 3 days. As a last recommendation, keep in mind that you should store all raw and cut vegetables and fruits in a container that is airtight. Never store or soak in water as vitamin C can easily dissolve when in contact with water.
